I bring breakfast to work each morning and here is one of my go-to recipes for something quick, healthy and deliciously versatile - baked eggs! I make them on Sunday and they are good for a few days in the fridge, or you can freeze. This variation has red pepper & feta cheese, but you can really add any ingredient you like.
